Are you referring to the product filter by categories?
Because sorting is something that you do to see the products in a certain order and I can see you have already had those options on the page.
Also, you are using the product categories widget which in a way working a category filter. If you want a more sophisticated solution, you can have a look at WooCommerce’s Product search extension. This has a live category filter as well.

Hi and thanks for reply. No, I would only modify the list of products category, the order is: Antipasti, Primi, Secondi……etc

Ok, I got your point.
We have to do this in two steps.
First, navigate to wp-admin > Appearance > Widgets section and edit the Product category widgets that you have added and select the “Order By” option to “Category order” – https://prnt.sc/wj2v6a
Next, navigate to wp-admin > Products > Categories menu and change the order of the categories the way you want to show them. You can drag and drop them using the button at the right side.
That’s all you need to show the categories in your desired order for the product categories widget.
