Could you please let us know if the sort also freezes with the smaller galleries? The drag&drop sort interface needs to load all of the previews and that surely implies lot of dynamic JS that can theoretically lead to loading problems.
As a workaround, you can try resorting the images manually from the shortcode mode by ordering the images’ IDs as in the example from below:

No, the sort doesn’t freeze with the smaller galleries.
I don’t want to sort them on ID, but on the name of the moth, as in the alt & title text. So your workaround doesn’t help me.
Perhaps the sized of the previews is to big?
I tried a few times and it worked at last. But it took quite a long time to load the page to sort the photos.
Do you have any advice to avoid this problem in the future?

Could you please let us know if the slow loading affects both the Insert Gallery Window modal and the one from Manage Galleries. IGW modal is known to be quite heavy on dynamic JS so not really sure that we have any other suggestions for you aside of waiting for it to completely load all of the images first before proceeding to use drag and drop sorting.
Opting for galleries with less images would be the only thing we can realistically suggest here.

I don’t understand your question. To sort the photos, I go to the page Manage Galleries. Then I use the button Sorting Gallery. Is there another way to sort the photos in a gallery?
In the meantime I’m going to look to split up this gallery. That should solve the problem for a while.

Absolutely. There are 2 solutions that allow to custom sort your images:
1) From “Manage Galleries” by accessing a gallery then press “Sort Gallery”;
2) From the page where you’ve inserted a NextGen Gallery module ( so called Insert Gallery Window or IGW ) by editing it then accessing “Sort or Exclude Images” tab.
I’ve found the second option. But that doesn’t work either with my overview of moths. Also here the process stuck. I think it is the amount of photos.

Yes, both of them are the same as functionality so I would assume it’s because of the amount of photos. Reducing the amount of images per gallery should help manage them easier.
