PayPal has been integrated into Edwiser Bridge plugin by default.
If you want to use Stripe Payment gateway then I would suggest you use WooCommerce Integration extension of Edwiser Bridge plugin as WooCommerce has ready integration of Stripe payment gateway. Also, you can use WooCommerce to sell Moodle courses as WooCommerce Products.
