Can you please inform me which block element you are using and facing the style issue? You can share a screen record or screenshots that how you are getting from Editing mode and the Preview mode. So that we can check accordingly on our side and help you to fix it.
Meanwhile, please clear your server cache, website cache, and browser cache as well. Let me know how it goes.

Also, I tried using other using blocks like the info box and the accordion blocks and neither are displaying my changes in the preview. So it seems to be a universal issue with the plugin. Thanks much!!

I have tried to change the icon colour and background colour in two ways. One is from content settings and another is from the Style tab. In both ways, it is working well. You can check this screen record.
For your issue it seems this is caching related issue. Please clear your website cache and hosting cache as well. And then retry once. Hope your issue will be fixed.
