Subject on emails

Hi I have Custom contact forms installed on my website that a company made for me. There are two different forms on the site (quick quote and booking form), they both work fine however when i receive an email, I wondered if it was possible to change the subject for the email they generate to me. I know you can change the subject for both in the general settings, however want to differentiate between the two when i read them in my email. Many Thanks
