Currently, we do not have an option that allows subscribers to choose categories based on their interests. However, in our Pro plan, you can add a list option from which subscribers can choose the list they want to subscribe to.
As an example, Jhon selected a health option at the time of subscription, so his email address will be added to the health list. You can then use that list to send campaigns to him.
In your case, you can create a list name that matches the categories you have and then set up the campaign according.

Thank you for your reply.
I understand that I can create Lists. Would it be possible that a subscriber, after clicking the subscribe button, gets to see a list of options to subscribe to (the ones that are listed in the List) and choose one or more of those options?
How does that work when I post about a Health topic? Do I need to specify somewhere that this is a Health topic and new Health posts that are going to be sent only to the subscribers to Health posts?

Below you will find the answers to your questions
Email subscribers have the option in that, Subscribers can choose the list before submitting the form, just like a checkbox.
Once you have selected the list and submitted the form. The plugin will automatically add the email and name to the selected lists.
Eg: I created four lists: investment 1, healthy 2, automobile 3, and breaking news list 4, so when the visitor fills out the form details, they will be prompted to choose their list. When the visitor chooses the list of interesting topics and submits the form, his address will be added to the appropriate list.
Note: Subscribers need to select the list before submitting the form.
