In order to exclude any product, there is currently only one option, you need to activate the option “Exclude from Sync?” for every individual product. You can find this option in the product data under the tab “PayPal Zettle POS”.
There is, unfortunately, no bulk option for this and I check in the export data, but there is also no option to perform this option via the export/import function from WooCommerce.
We have already feature requests open in the developer “wish list” for “exclude a bulk category from sync, like is possible with individual products”, but have not gotten permission to get this developed and released. We hope to add such a function in the near future, but can’t be sure when we will get the green light for this. I will link the feature request to this thread so you get an update once we release such a feature.
