Syntax error using mail-tag

I have a select field that allows a visitor to select an option that is mapped to an email address:

[select topic “General question|[email protected]” “Press inquiry|[email protected]” “Website inquiry|[email protected]”]

According to this page, I should be table to use [topic] in the “To” field. However, this is giving a syntax error.
