The templates are for the individual listings and the listing archive pages (like the categories page). They are automatically loaded. They cannot be assigned to other pages. How were you trying to use them?
I’m trying to get a directory listing of all the names in the list to display.
I can see each individual listing… ie http://domain.com/listing/name1/
But when I want to see a directory of all the listings, I expected http://domain.com/listing/ to display them, but there is just a “404 Error – Page not Found”.
I thought that maybe I needed to set up a page and use the template as a page attribute in order to display the directory listings.
Okay, I can see the categories listing ie http://domain.com/listing-category/category1/ But there isn’t an initial page to show all listings, to select a category, or to search.

Please update to version 1.3. The page you are looking for can be found at domain.com/listings. The “Details” link has also been fixed.
That fixed most of the issue.
The options to search and/or choose categories is still not showing up.

The feature that you are looking for is an interesting one, and not currently on the development map. Go to http://lautman.ca/forums/forum/simple-directory/feature-requests/ and add it to the forum so I can keep track of it.
