My installation’s error log is repeatedly showing the following:
Error: The information for creating and confirming the intent is missing the following data: payment_method.This has only started with the 8.0.1 update. It may be stifling the display of the card input fields.

I don’t know if I can provide a screenshot per se as I’m not really sure how the error is manifesting, other than the complete absence of input fields for credit/debit card details. The error itself is from the log.

I tried to raise a ticket (7894124) but I seem to have been rebuffed. I need to have this resolved as this plugin is the sole method of our online sales which should be ~$2K per day.
I’ve checked your ticket and noticed that you selected the WC core instead of Stripe, and your ticket explanation seems related to the core, not Stripe. This may have confused the Happiness Engineer, leading them to redirect you back to the forum again.
We have reported this to the appropriate team and hope they’ll get you back soon.

Ah, yeah that doesn’t help. TBH I only chose that because I has no idea where the error was coming from.

I’ve just spoken to Stripe customer service and they’re saying it isn’t them.
As we mentioned, one of our Happiness Engineers will review your ticket and get back to you as soon as possible.
In the meantime, as a temporary workaround, you can revert the plugin to its previous version, which was working without any problems.
You can use a plugin like WP Rollback to perform this downgrade.
