WHy do I receive an error on the second level?
What do I have to edit, that the second level shows at least the subcategories?
WHat do I have to edit that the second level shows all products of the subcategory ?
Before we can decide on the problem can you please share how did you add the sidebar menu? Are you creating a custom menu or using WooCommerce’s Product Categories widget?
If you are using WooCommerce’s Product Categories widget then you can show the child categories without an issue and all categories, sub-categories will show the products associated with them if you click on them.
If the above solution does not satisfy the goal please share more details on your approach also you can share the shop page link where you have the problem.

I created the sidebar menu by using a product category widget.
When I select the second level of the menu, it seems that the shop is looking for the specific webpage, but cannot find it. I don’t receice an error message, but the page is blank and I see moving dots like when a webpage is loading.

WooCommerce comes with a Product categories widget which looks like this when you add it through wp-admin > Appearance > Widgets page – https://prnt.sc/wg6r8p.
Are you using the same widget?
This widget can show you products from all child categories. The levels are not an issue for this.
I will recommend you to follow these steps and let me know the update –
1. Switch to a different theme, recommended is the default ones i.e. Twenty Twenty
2. Deactivate all plugins and activate one by one to find out the faulty one
