As per the standard whatever timezone set in WP Settings, the same timezone based date and format will be saved in Google Sheet.

Can you confirm you are using this plugin

As per the attached screenshot, it does not look like you are using the current plugin.
Can you go in Plugins and check the addon name and visit the URL of the Plugin and confirm with me?
We are providing up to date API V4 of Google Sheet, and manual options are given to enter the field name, whereas attached screen is different, please confirm and let me know.
