We are updating a client’s site and need to know how to fix the hours we had set up from the previous version. Is there a way to just get the hours for that day? All I can find is how to list all of the hours for the week.

I don’t completely understand what you mean, please describe what you want to do (or have done in the previous version).
You can however access all data programmatically. In the developer guide in the documentation are many examples of using the API: https://github.com/janizde/WP-Opening-Hours/blob/master/doc/developer-guide.md

Here’s the website we’re working with: http://www.nicholesfinepastry.com/
At the top we display whether the store is open or closed and, if the store is open, we display the hours the store is open for that day. If it is closed we link to a page with the store hours listed. How can we recreate this with the new update?
