The one that breaks the camel’s back, screeches to a halt, blows a gasket, causes hell to freeze over, gives me time to make coffee and heat a danish… blows a fuse.
The key is to try to make sure that the plugins are not doing similar things or making similar queries to the database. There are a number of plugins that are very similar. It’s important to study what the plugin does to make sure there’s as little redundancy as possible.
Seven should not be too many. I have about the same number running on my WP blog and see no noticeable lag.

Each plugin is technically one, or a few functions. WP already uses a lot of queries and functions, so, if the plugin is well written, it should not make a perceptible difference. It depends on how many of these plugins are involved in delivering content on index.php, too.
Plugin incompatibility should be the bigger problem. Your website won’t be any the slower due to the plugins (for the most).
I’ve got 19 activated, and 35 in total in that folder.
No problems so far ..
