I know that Google recently made a change to make this harder to do, and i’ve had no luck setting up custom dimensions. Is there any other way to do this?

It’s actually quite easy, please read the plugin documentation and properly setup your custom dimensions.

Here is a tutorial about that, unfortunately is for my Joomla plugin (never had time to write one for WordPress), but using it:

you can easily configure your Google Analytics account and GADWP.
