At the moment, there isn’t an option to remove the tracking information from the Completed order email. That’s why clicking the cross doesn’t remove the status — the Completed status is currently fixed.
That said, we’re already working on an improvement. In an upcoming plugin update, we’ll add an option under General Settings → Order Email Display that will allow you to remove the Completed order status. Once that option is available, the tracking information will no longer be included in the completed order email if you choose to disable it.

That’s great news if you’re planning to include the option to exclude this status from the tracking display.
I’m sure I’m not the only one, but in my line of work, when the order is RECEIVED by the customer, payment is triggered and the “order completed” email is sent.
If this email contains the tracking number, it doesn’t make much sense: the package must have arrived at its destination if the order completed email has been sent.

I’m happy to let you know that we’ve released the latest plugin version with this improvement included. In this update, you can now exclude the Completed order status from the tracking display, so the tracking information won’t be shown in the order completed email if that doesn’t fit your workflow.
Once you update to the latest version, you’ll be able to manage this directly from the settings.
