Just to get a clearer context, when you say “Availability” text, do you refer to the “X in stock” or an actual string that says “Availability”?
If possible, share with us the URL of one product to get more clarity on this part.

It seems that your theme is the one adding the “Availability: ” text so you will want to add the translation on your theme and not on the WooCommerce plugin.
I was able to change the text on my test site by adding the translation to my theme:
