Try to do something ultimate-member(your_language), because the plugin forget the put the “-” and we stay like crazy try to find the problem.
And save your .po and .mo files in another place, because everytime the plugin updates, it deletes the translated .po and .mo files.

You can use Poedit to translate Ultimate member plugin.
Please see this article for additional info.
To create a new translation file for your language, you need the English translation file and open it with translation editor app like http://www.poedit.com
Using the Poedit you can save the English file as a new language and you will be able to translate the English text.
