Trying to Exclude One Category, Cannot

I’m trying to exclude one category and cannot. If there was some sort of check box that made this simple it would be great. The option to highlight and choose which categories you want to include doesn’t work well when trying to exclude a single category that falls in the middle of all the others. The whole ctrl hold down explanation is a bit iffy anyway.

If anyone has figured out a way to exclude one category please share.
