What are you using to handle your posts by email?
We are using the WordPress “post by email” function
“post by email” function is not in WordPress core for years now. You must use a plugin for that purpose with any recent WordPress version. What’s your WordPress version?
I did many tests using latest Jepack Post by Email module on a WordPress 4.2 installation using default WP theme and only Jetpack and Easy Add Thumbail plugins. I can’t reproduce your issue, the posts were always published directly without any issue, body content is ok, also the title and the attached image was set as thumbnail.
If you look at the code of my plugin you’ll see it’s pretty simple and only using a few lines of WP standard code. So there’s not much to check and potentially nothing that could cause an issue with posting by email. It’s working fine for me in fact.

Forgive the error. The JetpackPost by Email module is the function we’re using. We are on WP 4.1.2.
Is Easy Add Thumbnail used in conjunction with the Jetpack module, or instead of the Jetpack module?
The only feature of Easy Add Thumbnail is to set the feature image, so therefore I did the test using Jetpack for the post email feature while having Easy Add Thumbnail activated too.
No issues as explained. Also bear in mind that Easy Add Thumbnail does not touch the body of posts for anything, it only handles the process of telling WordPress to use the first attached image as feature image. Nothing more.
Looks like the issue is more related to the process of creating the post from the email than other thing. I would recommend you to expose your issue at Jetpack support forum.
