Ultimate Member Form Builder Issues

I upgraded to UM V2.10.1 (a major upgrade) and have had to re-install WP database and delete twice UM and re-install as it was not seeing any member profiles. Now I am trying to re-create my profile form (or registration form). I can add pre-defined fields (First Name, Last Name etc), but when I want to set up a new field e.g selecting a TEXT BOX, I get a banner saying add a new field with buttons add or Cancel. Clicking add gives no change i.e I do not get the screen to input labels and meta keys. This applies to many (not all) of the Set Up New Field data fields.

The list of User Meta is limited and does not appear to be extendable to e.g add Address_Line1

When I export all data in the WP Database using import/export plugin, all the user data is present (e.g address data, profile picture etc) but I have not found a way of re-syncing it to UM. Even so the Form Builder problem appears fundamental.

I can bring up basic user predefined profile data in the membership directory for all WP-users

As administrator I have WP-Admin access but not UM Custom Role access. Is this the issue? I have not found a way of setting it. Is there a security issue preventing me updating new user defined fields?
