Each payment method settings page contains an option that allows orders to be authorized or captured immediately. You likely have the payment method configured to authorize the payment, which sets the order’s status to on-hold by default.

Nothing changed about how that works between updates and there isn’t any code that would modify existing charge type settings.

Per the previous reply, each payment method settings page has a Charge Type option. You would navigate to WooCommerce > Stripe by Payment Plugins > Settings. From there you will see the settings page for each payment method.

That’s the Advanced Settings page. If you read my previous reply I specifically mention the Charge Type option is on each payment method settings page. So for example, to control if credit card payments are authorized or captured, you would go to the Credit Card Settings page.
