Unfortunately, a specific hook is not available to unset fields from the select dropdown in the Product CSV Importer & Exporter tool. However, you can manipulate the data using the woocommerce_product_import_pre_insert_product_object filter before it’s imported. This allows you to modify the product data before it’s used to create a product object.
