I have changed some french translation strings in woocommerce, should i do the woocomerce update or will it replace all my translations ?

Don’t edit installed language files. Please see FAQ https://localise.biz/wordpress/plugin/faqs/files-deleted

I suggest you move your modified files to the custom folder, using the Relocate tab. Do this before you run any updates.
