when you say “The only thing I don’t like is the fact when they log in they have access to the back end of the site.” Is this particular to the EM menus or the whole dashboard since you already installed a plugin to limit them from accessing the dashboard?

It is just the ‘Profile’ and ‘Events’ menus they can see since I installed the additional plugin but as I don’t want them to be able to change or edit any of the events it means they don’t have any options on the Events page on the backend anyway – it doesn’t even display the course they have booked. So I only really want them to see the front end.
I would be happy for them to see the backend Events page if there was anything to see but unless I am misunderstanding the Subscriber Preferences in the Settings, when you deselect all check boxes except for ‘manage_bookings’ they can’t see the courses they have booked on the backend Events page.
Basically I would rather they just see the front end to see what they are attending and not have any access to the backend.
you can block admina rea access with other plugins like – http://ww.wp.xz.cn/plugins/wp-block-admin/
manage_bookings isn’t relevant for viewing bookings, it’s or adminning bookings to events your user created. you could uncheck every capability for subscribers and they could still see their booking history.
chances are you have chosen the same page for My bookings page and Manage Bookings page in Settings > Pages > Other Pages, choose seperate pages.
