variable products

Hi, I have the pro version and need to check that something will work. I’m using this on a school summer holiday club so the variables are date/age/time the only variable I need to limit is the date so there are 16 places available across two different ages and 3 different time slots. The main ‘product’ is for a week and client selects the date etc variable. How do I go about this?
