Here are answers to your queries:
1. You have to enable Height first and add values on Height, After Adding Height the options Content Vertical Alignment with Responsive Options will be visible, Top, Middle, and Bottom Vertical Alignment options are available. These options are available on the Advanced Tab of Most of the Gutentor Modules.
2. Gutentor widgets are easy to use but may not have all options you seek, in this case, I would like to recommend you to use Gutentor Modules.
3. We notice it too, we missed it on the previous version of WordPress 5.8, we will fix it on the coming version, the coming version will be released someday in the coming week.
4. If you know the code you can use gutentor_icon_picker_icons Gutenberg hooks to add icons. We may add GUI for users in near future to add any custom Icons.
5. For now Responsive Custom Width Options is available when you enable Custom Position on Advanced Tab, First Enable custom Position, Select Relative or Any Available Position and add Width options are available below Position Options.

1- This is not what I meant.
For example, in Featured Widget, If I applied the steps you mentioned, it will align both image & text together to widget top or middle or bottom. But it will not align image and text to the middle of each other like here in the image https://prnt.sc/1poqt7i
2- You are doing a great effort to provide this extremely helpful plugin. Thanks a lot for that. We would really appreciate it if you added that feature in your update in the future.

5- Yes, that’s the needed option. But we need it for the normal element position.
