Video gallery

I have a client who wants 8 topics of videos. Each topic of videos will be listed (maybe thumbnail – depending on quantity) on their own page that has other content.

They also want to be able to list the entire range of videos (no thumbnails), alphabetical or by topic when you choose ‘videos’ from a link, whether it’s a menu item or alternative link source.

Should I create post categories and post each video or use a gallery plug-in and insert into pages? I have pages for the 8 topics anyway.
