is there a way to see all the email logs and not only the last 250?

Yes, you can increase log entries in Settings > Logging page.

Great, thanks! Is there a way to see the old emails or no?
That setting is from today correct?

No, You can not get old logs, if you set logs count today then you can see logs from today.
