If I add a new image and assign it to a product, I still get the same error message with an updated missing url.

For those who have a stat failed issue, have you checked that the file are really on the server (by going in FTP/SFTP mode, navigate to wp-content/uploads/… ?)
Basically, the stat failed issue means that the app tried to calculate the filesize of one of your pictures, but the file was unreachable by the app (means deleted or no read-right for this file (which should be very strange!)).

I contacted my host provider and they stated that the images ARE in the correct folder. I checked in FTP and strangely I can’t see the image and if I upload it again it simply disappears. When I asked BlueHost about the issue they told me they could see the image in the folder I told them. Even if I add a new image to an existing product, I get the same error message with an image I’ve just added. All the permissions are correct.

A new release of reSmush.it Image Optimizer has been posted so that filesize issue will be corrected (the missing files won’t be processed).
However, you may still have some missing files in your library. I suggest you to install Media Cleaner plugin which will find for you missing or orphaned relations in your library : https://fr.ww.wp.xz.cn/plugins/media-cleaner/
