Hey Hey ….

Isn’t it possible to set it up so that an admin approval isn’t needed before it becomes a news item?! I mean, so that when I’m at a location and send an email with a photo, it just gets published immediately?!

Yes, you just need to make sure your “from” email address matches your site user’s email address. If that doesn’t work you’ll need to look at permission associated with the user associated with the “from” email.
