As I see the issue is about cache on the website. Please, reset the plugin settings to the default values. The guide is here:

Then clear your website cache. Make sure that the website cache is 24 hours or less.
It will fix the issue. Did it help?
Speaking of the empty Anti-Spam Log, there are two websites with the same name added to your Dashboard, that’s why you see the log as empty. Please, check your first website’s log, not the second’s that was freshly created today:

The issue isn’t about cache, we have dynamic cache settings on the website… the issue is the “Order denied” log entries I see (thx for clarifying the empty log issue) we are receiving. We checked with a customer since I turned off the the Woo checkout form settings on CleanTalk and he was able to complete the order checkout, he previously was denied. The question is why is CleanTalk seeing WooCommerce orders as spam? Additionally we have several “Contact form data denied” entries which seem to be legitimate requests.

Based on your previous requests, some visitor parameters were not being transmitted correctly, which resulted in incorrect filtering. For this reason, our cloud blocked such requests. But now, as I see, the parameters are transmitted correctly.

Hi I don’t really understand “some visitor parameters were not being transmitted correctly”? What do I need to change in the plugin settings to avoid WooCommerce orders being incorrectly denied on check out?

When checking spam requests, the user must pass several spam checks. The results of these checks are sent to the cloud to establish a verdict. For some reason, not all checks are processed correctly. In general, the issue can be caused by a conflict with some of the site’s plugins or forms. In your case, the issue was most likely caused by the cache. Please follow the recommendations my colleague @serge00 suggested.
Also, set the “Set cookies” option to “‘Store data in the website database (alternative mechanism)” in the Anti-Spam plugin settings.
