To help keep customer info secure, credit card info is not saved to WooCommerce orders, as that would add those details to the site’s database and make it potentially accessible to anyone that has access. Instead, payment methods/gateways for credit cards save ‘tokenized’ versions of that sensitive data on the order but the actual card info is stored on the payment processor’s secure servers.
If you do collect that sensitive info from customers on the site, I would strongly suggest making sure that it is encrypted/tokenized and kept secure, rather than adding the credit card info to an order nd/or saved in the site’s database via ‘plain text’, due to the liability and/or legal ramifications that can potentially be involved with that (GDPR, PCI compliance, etc).
I’d recommend looking for an ‘offline’ credit card processing gateway that allows you to store that info securely until the order is called in to the company and processed.

I haven’t used that product personally, so I can’t speak to the specifics of it but from my experience it seems like a fairly popular option for situations like you described. Based on the info of that page, it sounds like they cover most if not all of the concerns I mentioned, though, contacting them to confirm before paying for anything is definitely the right move. 🙂
