WooCommerce Shipping Automatic

Hi on my WooCommerce Shipping Tab, the setting at the bottom of the page is to choose the cheapest shipping method automatically.

I am shipping a book so the cheapest shipping method takes up to 2 weeks. I simply added this option if my client wants to save a few bucks.

I want my shipping method to default to the next highest method which is Priority Mail. The book is too heavy for First Class Mail.

How can I turn off the Automatic setting at the bottom of the page on the Shipping Tab? And how can I set my own default to be Priority Mail? I am using the Additional Rates feature under Flat Rate like this

Media Mail – (Up To 14 days)|6.99|yes
Priority Mail – (3 – 5 days)|10.99|yes
Priority Express Mail – (2 – 4 days)|15.99|yes
