Hi Dan,
The EU VAT Assistant includes some code to handle the subscriptions created by the official WooCommerce Subscriptions plugin. So far, it should still be working fine.
We haven’t tested the membership plugins you mentioned, but, since the purpose of the EU VAT Assistant is to collect VAT data from orders, those plugins should be irrelevant to it.
I’ve tried this EU VAT plugin, with the Aelia classes for WooCommerce, but it breaks the Stripe fields in checkout. No data can be entered into the fields.

The EU VAT Assistant doesn’t affect the checkout fields. It adds its own fields, to enter the VAT number, without interfering with Stripe.
We use Stripe ourselves, together with the EU VAT Assistant (which we developed for our own internal use, mainly), on our own site (https://aelia.co/). The Stripe fields work normally.
If the fields are disabled, that might be due to a conflict with something on the site. It’s difficult to give an answer, without an investigation.

As a further test, I verified our development site, at http://wc-demo.aelia.co/checkout/. The checkout page works fine there too, the Stripe fields can be populated as expected.
