Can you please:
- Go to Settings > YouTube Channel > Tools > click on button “Download YTC global settings” > send JSON file to email

- In same email send shortcode that you use to print YTC block, or if you use YTC Widget instead, at the bottom of widget click on link
get JSON file and also send downloaded JSON to email address mentioned above

Re item #2, please check with a web developer who inserted YouTube Channel block to your website how to get those details. Unfortunately, I don’t know how YTC block is added to page on your website so can not help w/o accessing WordPress back-end (so better to check with your web developer).
I think that YTC shortcode or widget have defined local long cache time which prevent plugin to fetch fresh data for a long time (3+ weeks).
When I visited your website with URL parameter that say to YTC to ignore cached data and fetch new one no matter about defined cache policy in plugin settings or locally per shortcode/widget, I got a latest video from your channel which is published 6 days ago.
