The sitemap index contains 5 individual sitemaps. When you say the sitemap is not updating, can you please provide some more information? Are there specific URLs you expect to see in an individual sitemap that is missing?

I can confirm that there is a 301 redirect from https://www.specialeventsequipment.com/portfolio-item/standing-portable-truss-system/ to https://specialeventsrental.com/portfolio-item/standing-portable-truss-system-to-set-up-in-the-back-of-the-stage-for-lighting-backdrop-or-to-be-use-on-any-type-of-event/ using a third-party plugin; it seems to be the Redirection plugin.
The Yoast-generated sitemap is unable to exclude a 301 redirect created outside of our plugin. This explains why that URL is still showing in your portfolio sitemap.
So I need to remove the redirection?
I am unable to advise if removing the redirect is the way to go since I do not know why it was created in the first place.
However, you may want to be aware that performing a site search, the redirected URL is actually not in Google index. See image. Though the URL is in the sitemap it is not indexed which seems to meet your expectation.
