We are not sure why you are getting this error. However, to be sure, we would like to rule out any plugin or theme conflicts that may occur. The fastest way to do this is to deactivate all non-Yoast plugins and switch to a standard theme like Twenty Nineteen.
Test this on your development or staging site, if you have one. If not, we recommend using the Health Check & Troubleshooting plugin. This plugin allows you to run a conflict check without affecting normal visitors to your site.
As we can imagine that you’re unfamiliar with checking for conflicts, we’d like to point you to a step-by-step guide that will walk you through the process: How to check for plugin conflicts.

Okay I installed Health Check & Troubleshooting and with Troubleshooting mode – enabled viewing the front end looks like this:

There is nothing activated apart from the default WP theme, Yoast SEO and Health Check & Troubleshooting.
I’m not sure what to do now.

https://dev.usedkitchenexchange.co.uk/sitemap_index.xml is a copy of the above.
Do you know why it doesn’t work on the production site?

We cannot say for certain why it works well on the dev site but not the production site. Can you delete the Yoast SEO plugin and reinstall it again?

@rabbitwordpress We rechecked the sitemap at https://usedkitchenexchange.co.uk/sitemap_index.xml and are no longer seeing an XML parsing error.
Can you please confirm whether you were able to resolve the issue?
