Thanks for your feedback and apologies for the late reply. The plugin works only with a live site at the moment. We are working on it so that it can be installed locally as well.

If you want drag and drop editing with Gutenberg or Elementor, there are plugins called ShopEngine and Cadence Blocks. You can check those out. But checkout field editing might be pro feature. So, I recommend you try the WooCommerce documentation first.
