Hi Peter, thanks for getting back to me.
I will chat with the hosting provider to find out the server’s default collation and see if that can shed any light on the matter.
If I do convert each of the Wordfence tables using phpadmin to say the default collation for the utf8mb4 character set, am I likely to see any issues with the ongoing running of Wordfence ?
