Sorry @andreadegiovine I think I understand now. What’s happening is each post type can only be assigned one template OR each template can only exist on one post type. Please forgive me.

It looks like the only post type the shows up is ones that are newly created. None of my old ones are showing in the “Template Settings” on the Create/Edit template pages.
