Ok, so, this problem was caused by me updating the Plugin naïvely via WordPress store, forgetting that I had purchased a license, and that the image feature required a license. The second issue that came to play here was the fact that the pro plugin throws a fatal error and cannot be acivated while the WordPress store / non-pro version is active.
The solution is to deactivate the non-pro version, download a current pro version from the rednao webpage, and activate that. The existing PDF templates will thankfully continue to work / be saved.
