I had to use the process of elimination, disabling the plugins one after the other, turns out the litespeed cache plugin I installed was the issue.

Yes, I have done that.
I also tried copying the shortcode to test on another page I created as a demo checkout
but I get the same response everytime I click on proceed to checkout
“CHOOSE AN ITEM FROM THE MENU TO GET STARTED.”
