Just FYI,
I’ve found that for bookable products that I’ve created, if I go in to edit them and change the product type temporarily to “Simple product”, the custom emails tab shows up, and I can select the settings I want for the product. Then change back to a “Bookable” product, then press the “Update” button. All the settings are being saved in WooCommerce, despite changing the product type from “Bookable” to “Simple”, and back again. And the custom emails are being attached in the correct places for my bookable products!
Maybe this will help someone else too.
