Is there a short code (something like “[user-email]”) that can be put in the Form Settings > Send From Email section. Since there is a setting to have the user cc’d on the email, then there should definitely be a way to make the “from email” the submitting user’s email as well. This is a desired feature because site admins want the ability to simply reply to the email notification that is sent once the form is submitted.
