Thank you for the information Jeremy. Getting confirmation that either plugin won’t remove fields from the emails helped in my debugging.
Just a heads up on how I fixed it and a possible bug report based on my findings.
We had W3TC activated and it seems this was affecting form submission emails for users not logged in. As we had W3TC configured to not cache when logged in, this makes sense the differences in the 2 ways we were receiving emails. But, this concerns me for situations where we need to use W3TC and have a contact form for users not logged in. For now, I have disabled W3TC, but would appreciate a response if this is something that might be looked into in the future.Thanks!

@scott, 2 months late, but thanks for the quick update. Appreciate the simplicity of the plugin!
make sure you are running PHP 5. str_ireplace() only supports that version of PHP.
