I never did get it to work, but I was able to use CF7’s own hook for writing to a custom table. See: https://www.lassiemarlowe.com/tutorials/wordpress-post-contact-form-7-values-to-a-custom-mysql-table/
Good to know the author of this plugin has fixed the issue!
You don’t have to turn on the tracking, see #6 in the installation guide:
6. Use Google Analytics Tracking options to configure/enable/disable tracking.
If you don’t turn on the tracking code it won’t insert it, but you still get the stats from your Google Analytics account if you so desire.
