I would like to see a custom order status, like “Completed, awaiting final payment” so the customer is notified that the order has shipped, but I can see from Orders that we have not yet received funds.

How about the other way? I am splitting a Magento store into two WooCommerce stores. Does the license support 2 WC stores?
