The trick is getting a selector that is specific/powerful enough to override any other cascade rules. This worked for me:

However, this means creating a new button via paypal every time you add a product.

Paypal shipping profiles offer the option to use weight to determine the shipping cost. If there is no way to link that piece of information, then there is no way to use the profile based shipping. Are we missing something?
