I use your plugin with a number of my client websites. Before going live, I test to make sure the contact forms are working. I always use the same test user email and the same administrator email. Both get emails from each other on a daily basis. The confirmation email sent to the user goes through fine. CCs do not work. BCCs do not work. The email to the administrator does not work.
